pitted and sliced

English cucumber
sliced thin

pine nuts or pistachios
Salad Dressing

olive oil

fresh squeezed lemon juice
zest of a lemon

dijon mustard

salt
additional salt and pepper to taste
Instructions
Add all salad dressing ingredients to a mason jar and shake until mixed, could also whisk together
Layer salad ingredients in a large bowl, lightly coat with dressing and mix
Store leftover dressing in the fridge for a couple weeks
Suggestions for additional toppings: sunflower sprouts, protein of choice, greek seasoning, shallots, or olives.
