Double Chocolate Blender Muffins

Blend, Pour, Bake, Cool, Serve -- that's all it takes for these tasty sweet snacks!

Equipment

  • High Powered Blender

Ingredients
  

  • 1 cup unsweetened vanilla almond milk
  • 2 very ripe bananas, peel removed
  • 1 cup rolled oats - I use gluten free
  • 1/4 cup peanut butter - or other nut/seed butter
  • 1/4 cup cocoa, unsweetened
  • 1/3 cup maple syrup
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup chocolate chips + extra for topping

Instructions
 

  • Preheat the oven to 350
  • Add all the ingredients from milk to baking powder to a blender
  • Blend until batter is smooth, about 1 minute
  • Pour batter into a large measuring glass
  • Add 1/4 cup of chocolate chips and mix
  • Pour batter into muffin tin, filling about 3/4 of the way
  • Sprinkle extra chocolate chips on top
  • Bake for 18-20 minutes
  • Let cool before serving
