Double Chocolate Blender Muffins

Blend, Pour, Bake, Cool, Serve -- that's all it takes for these tasty sweet snacks!

Ingredients
  

  • 1 cup unsweetened vanilla almond milk
  • 2 very ripe bananas, peel removed
  • 1 cup rolled oats - I use gluten free
  • 1/4 cup peanut butter - or other nut/seed butter
  • 1/4 cup cocoa, unsweetened
  • 1/3 cup maple syrup
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup chocolate chips + extra for topping

  • High Powered Blender

Method
 

  1. Preheat the oven to 350
  2. Add all the ingredients from milk to baking powder to a blender
  3. Blend until batter is smooth, about 1 minute
  4. Pour batter into a large measuring glass
  5. Add 1/4 cup of chocolate chips and mix
  6. Pour batter into muffin tin, filling about 3/4 of the way
  7. Sprinkle extra chocolate chips on top
  8. Bake for 18-20 minutes
  9. Let cool before serving
