Arugula Salad with Simple Lemon Vinaigrette

So quick and versatile this recipe has been the base for many meals and sides in our home over the years, Lemon, avocado, and cucumbers are favorites for all of us, but my favorite part Is the dressing, which I make by adding ingredients to a mason jar and shaking it until everything is combined — it doesn’t get much easier than that!

Arugula Salad with Simple Lemon Vinaigrette

Prep Time 15 minutes
Servings: 4
Course: Appetizer, Main Course, Side Dish

Ingredients
  

  • 5 oz baby arugula
  • 1 ripe avocado pitted and sliced
  • 1/2 English cucumber sliced thin
  • 1/4 cup pine nuts or pistachios
Salad Dressing
  • 1/2 cup olive oil
  • 1/4 cup fresh squeezed lemon juice
  • zest of a lemon
  • 2 tsp dijon mustard
  • 1/4 tsp salt
  • additional salt and pepper to taste

Method
 

  1. Add all salad dressing ingredients to a mason jar and shake until mixed, could also whisk together
  2. Layer salad ingredients in a large bowl, lightly coat with dressing and mix
  3. Store leftover dressing in the fridge for a couple weeks
  4. Suggestions for additional toppings: sunflower sprouts, protein of choice, greek seasoning, shallots, or olives.
