Double Chocolate Blender Muffins

Easy recipes have become increasingly important with more time at home and virtual learning. These blender muffins are now the girls’ favorite things to make during our extra time at home. Virtual learning has its perks — mornings are less hectic, less driving, and more time together. But it comes with its headaches too — there are a lot more dirty dishes around the house these days!

My youngest loves baking when her virtual days are over, so last spring when we first shifted into this routine of virtual learning she started to play around with blender muffin recipes. They’re easy enough for her to make on her own — and something about being the little sister makes you want to do things on your own. I’m so happy she enjoys making these, because I’ve grown fond of being able to wake up and have a chocolate muffin with my coffee. 

Blend, pour, bake, cool, serve. That’s for these tasty snacks! The additional sprinkle of chocolate chips on top is totally optional — but absolutely not optional for my girls, and I’m totally okay with that. I hope you enjoy this simple yet sweet recipe as much as we do! 

Ps. A giant thank you to all the teachers out there getting creative and helping to keep the students engaged during these very strange times. And to the parents doing their best to support the kids.

Double Chocolate Blender Muffins

Blend, Pour, Bake, Cool, Serve — that's all it takes for these tasty sweet snacks!
Prep Time 10 minutes
Cook Time 20 minutes
Course Breakfast, Snack

Equipment

  • High Powered Blender

Ingredients
  

  • 1 cup unsweetened vanilla almond milk
  • 2 very ripe bananas, peel removed
  • 1 cup rolled oats – I use gluten free
  • 1/4 cup peanut butter – or other nut/seed butter
  • 1/4 cup cocoa, unsweetened
  • 1/3 cup maple syrup
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup chocolate chips + extra for topping

Instructions
 

  • Preheat the oven to 350
  • Add all the ingredients from milk to baking powder to a blender
  • Blend until batter is smooth, about 1 minute
  • Pour batter into a large measuring glass
  • Add 1/4 cup of chocolate chips and mix
  • Pour batter into muffin tin, filling about 3/4 of the way
  • Sprinkle extra chocolate chips on top
  • Bake for 18-20 minutes
  • Let cool before serving
